Hygiene



3. Hygiene:

The study of health and prevention of disease is called hygiene. Because of the danger of illness linked to food, hygiene requires particular attention from everyone working in the field.


Food Related Illness:


  1. Food Poisoning - Contaminated food.
  2. Food Borne Illness - Use food as medium to enter the body.
Basic Reasons Behind Food Poisoning:
  1. The accidental occurrence.
  2. Lack of knowledge.
  3. Ignorance of hygiene rules.
  4. Keep raw and cooked food together.
  5. Inflected food handlers.
  6. Thawing frozen food properly.
Types Of Food Poisoning:

There are two types of food poisoning,
  1. Bacterial Food Poisoning
  2. Chemical Food Poisoning
1. Bacterial Food Poisoning:

Bacteria's are microscopic organisms commonly referred as germs which are found on and in the human body, food, water, soil and air. They cannot be seen by the naked eyes when the food poisoning bacteria get in contact with raw or cooked food, bacteria food poisoning happens. The food poisoning bacteria's are collectively known as Pathogenic Bacteria's.

For Example:

Most common food poisoning bacteria's are,
  1. Salmonella
  2. Staphylococcus
  3. Clostridium Perfringens
1. Salmonella:

Salmonella is found in the large intestine and soil so washing fruits and vegetables is very important. It is also found in human body outlets. Cockroach Saliva is a big source of salmonella.

2. Staphylococcus:

It is found on the skin or the human body outlets. (nose and throat, skin and hair).

3. Clostridium Perfringens:

It spreads from the soil and it is also found in animal intestine. They are very strong and can only be destroyed with high flame cooking or high temperature.

2. Chemical Food Poisoning:

It occurs due to the entrance of any food poisoning chemical during the process.

For Example:

Lead, zinc and copper.
